Zucchini muffins make a fantastic snack/breakfast or treat for your little ones. A healthier paleo option too.
These are Spirohealth‘s Bianca’s favourite sweet treat and they are super easy to make.
½ cup of coconut flour
2 table spoons of ground flax
1 teas spoon of baking powder
½ teaspoon of baking soda
1 teaspoon of cinnamon (although I love cinnamon so I sure more)
1 cup of grated zucchini
2 eggs room temperature
½ cup of melted coconut oil
1 teas spoon of vanilla
6 table spoons of agave syrup
¼ cup of chopped walnuts.
Mix wet and dry ingredients together and spoon in to small cup cake cases. Makes 12.
Preheat oven to 375 F and cook for 15-20. I would keep an eye on them as there is a balance to getting them just right and not too wet or over done.
