Go Vegan 1 day per week

Within Bria’s household for the last few months they have attempted to have vegan Monday’s.

Bria writes ‘One day of the week where we attempt to refrain from eating meat and dairy. Now we have no intention of going fully vegan but simply enjoy the variety that it not only brings to the dinner table but to our diets. I have had to become creative with the meals that I make in an attempt to incorporate as many vegetables as possible.’

I have listed the benefits of having a varied diet and one of my favourite go to recipes when all else fails.

 4.Not eating meat can benefit the environment

My go to Creamy peanut Stir-fry

For the peanut sauce
2 tbsp peanut butter (crunchy would be nice)
2 tbsp soy sauce (light or dark are both great)
2 tbsp sweet chilli sauce
¼ cup water
1 tbsp maple syrup
For the stir-fry
2 tbsp oil (ideally peanut oil. Sunflower oil will do too.)
1 clove garlic (peeled and diced)
1 piece thumb sized ginger (peeled and grated)
1 onion (peeled and diced)
2-3 cups of a variety of fresh or frozen vegetables (broccoli, carrots, cauliflower,
1 big handful snow peas/sugar snaps
6-8 baby corns
4.5 oz noodles (I love glass noodles as they’re really quick to cook and taste
1 handful peanuts

For the peanut sauce mix everything n a bowl. For the stir-fry; Place the vegetables in the wok and allow them to cook for about 4 minutes before adding the noodles and sauce. It may start to boil quickly so you may need to add some water depending on your preferred consistency. Let it simmer and then you are ready to serve.
